2 ¾ cups all-purpose flour
1 tsp baking powder
½ tsp salt
¾ cup softened, salted butter
1 cup granulated sugar (or substitute)
2 large eggs
1 tsp pure vanilla extract
½ tsp almond extract
Combine first three ingredients in a medium bowl, whisk and set aside.
In a large mixing bowl, combine butter with sugar – whip to a light and fluffy mixture. Add in eggs, one at a time – mixing in between. Stir in vanilla & almond extract.
Begin slowly adding flour mixture to wet ingredients until a dough forms.
Separate dough into two balls and place between two sheets of waxed paper – roll the dough out into a 1/4 inch thick and refrigerate for a minimum of one hour before cutting into shapes.
Preheat the oven to 375 degrees.
Bake cookies on a cookie sheet for 8-9 minutes – remove from oven and let cool.
Once cooled, decorate with icing and sprinkles.
