12 eggs, hard boiled & peeled
1/4 cup light mayonnaise
1/4 cup light Miracle Whip
1 Tbsp yellow mustard
1-2 dill pickles – finely chopped (OR) 2 tsp dill pickle juice
1/4 tsp kosher salt
1/4 teaspoon black pepper
Paprika and green onion or chives for garnish
Start by slicing the eggs in half lengthwise.
Using a spoon, scoop the yolk from each side into a bowl.
Mash the yolks with a fork. Add mayonnaise, Miracle Whip, mustard, dill pickles salt and pepper. Mix it all together until it turns into a smooth creamy texture. I used a food processor to help with this step.
Scoop the mixture into a large plastic ziplock back. Snip one of the corners of the bag – you will use this as a piping bag.
Arrange egg whites on a plate and begin piping yolk mixture into each egg white.
Sprinkle with paprika an garnish with chives or green onion.
