Beef Burrito Casserole

INGREDIENTS

1 Tbsp olive oil

1 lb. Lean ground beef

1 tsp taco seasoning

1 tsp minced garlic

4 cups cooked rice

1 cup cooked corn

1 16oz. jar mild salsa

1 green onion, sliced

1/2 Tbsp chili powder

4 oz. cream cheese

1 cup shredded cheddar cheese

salt & pepper to taste

INSTRUCTIONS
Preheat the oven to 350ºF. Add the oil, beef, and minced garlic and taco seasoning to a medium skillet. Cook over medium heat until brown and crumbled.
In a large bowl combine cooked rice, corn, green onions, ground beef, salsa and chili powder.
line a casserole dish with non-stick cooking spray. Spread half of the rice and beef mixture over the bottom of the casserole dish. Add small dollops of cream cheese evenly across the surface, then cover with the remaining rice and beef mixture.
Cover with foil and bake for 25 minutes. Remove foil and top with cheddar cheese – place back into oven for an additional 5-10 minutes minutes, or until the cheese is melted.
Top with lettuce, tomato and enjoy!
