1 lb. Lean ground beef
1 garlic clove, minced
1 small yellow onion, chopped
1 Tbsp olive oil
1 (12 ounce) package jumbo pasta shells
1.5 cups ricotta cheese
3 cups low-fat cottage cheese
3 cups shredded mozzarella cheese, divided
1/2 cup Parmesan cheese
1 Tbsp Italian Seasoning, divided
Salt and pepper to taste
1 (28 ounce) jar pasta sauce
Preheat the oven to 400 degrees
Prepare a 9×13 baking dish with cooking spray
In a medium skillet heat olive oil – add onion and garlic, cook until soft and translucent. Add ground beef – cook until browned and crumbling. Drain. Stir in pasta sauce & 1/2 Tbsp Italian seasoning. Reduce heat to low and simmer. Bring large pot of water to a boil. Place Jumbo shells into hot water until soft (about 9 minutes). Do NOT over cook or shells will start to break apart. Gently drain water.
In a medium bowl combine cottage cheese, ricotta, 2 cups mozzarella cheese & 1/2 Tbsp Italian seasoning.
In prepared baking dish – place a layer of sauce on the bottom. Stuff jumbo shells with cheese and place side by side. Pour sauce sparingly over shells and top with remaining mozzarella cheese.
Bake covered for 30 minutes.
