INGREDIENTS
Ingredients for Broccoli slaw:
1 (12-ounce) package broccoli slaw mix
1/2 cup light mayonnaise
½ cup sugar (monk fruit)
1 tablespoon apple cider vinegar
Ingredients for Pork roast:
2.5 pounds boneless pork shoulder roast
1 tablespoon olive oil
Ingredients for Seasoning:
1/2 packet McCormick BBQ Pulled Pork Seasoning packet.
1/2 cup no-sugar added ketchup
1/2 cup brown sugar (swerve)
1/3 cup apple cider vinegar
INSTRUCTIONS
Instructions:
In a large skillet on medium heat with olive oil, lightly brown pork roast on all sides. Place roast in a slow cooker. Combine seasoning mixture together in a small bowl and pour over roast. Cover and cook on low 6 hours or on high for 4 hours. Shred pork with a fork once done.
To make Broccoli Slaw:
Combine ingredients in a bowl, cover and refrigerate 6 hours while pork slow cooks. Serve broccoli slaw with pulled pork on a bun, tortilla or on its own.
