Caribbean BBQ Jerk Chicken

Sheet Pan Steak Fajitas

A mix of seasoned vegetables and steak served baked on a pan.
INGREDIENTS

1-2 steaks of choice (sirloin or round)
2 tablespoons olive oil – divided.
1 yellow onion, thinly sliced.
1 yellow bell pepper, thinly sliced.
1 red bell pepper, thinly sliced.
½ tablespoon low-sodium soy sauce (liquid aminos)
1 package of tortillas (I use Carb Balance)
2 tablespoons taco/fajita seasoning packet

Juice from one Lime

INSTRUCTIONS

Preheat oven to 450 degrees.

Marinade steak: In a large plastic Ziplock© bag, combine 1 tablespoon olive oil, soy sauce, lime juice, and 1 tablespoon of seasoning mixture. Set aside.

Slice peppers and onions, and place in a bowl with the remaining oil and seasoning mixture.

Toss to coat. On a lightly sprayed cookie sheet, arrange peppers and onions around the outer edges. Add marinated steak to the center of the cookie sheet.

Cook at 450 degrees for 12-15 minutes – broil for an additional 2 minutes to crisp outer edges.

Let steak rest for 10 minutes, then slice against the grain.

Serve with warm tortillas and desired toppings.

Optional toppings: lettuce, tomatoes, shredded cheese, plain Greek yogurt, and diced avocado.
