For Wraps:
3 cups baby spinach – chopped
1 cup carrots – shredded
1/3 cup peanuts – chopped
1/4 cup fresh cilantro – chopped
2 cups cooked and sliced chicken breast
4-6 tortillas
For Peanut Sauce:
1/4 cup honey
1/4 cup olive oil
1/4 cup peanut butter
3 tablespoon rice vinegar
1 tablespoon soy sauce (liquid aminos)
1 teaspoon sesame oil
1/2 teaspoon pepper
1/4 teaspoon salt
1/4 teaspoon crushed red pepper flakes
1 tablespoon ginger paste
1 large garlic clove, minced
In a medium bowl, mix together peanut sauce ingredients. In a separate bowl combine spinach, carrots, cilantro and peanuts. Pour sauce over spinach mixture and toss to coat.
Warm tortillas for approximately 8-10 seconds.
Divide chicken and spinach mixture between each tortilla. Roll tightly, cut in half and serve.
