Mini-Quiche Cups

INGREDIENTS

6 maple sausage links
l/2 cup shredded Cheddar cheese
1/4 cup chopped green onion
6 eggs – beaten
Salt and ground black pepper – to taste

INSTRUCTIONS

Preheat oven to 325 degrees F (165 degrees C). Lightly spray a 6-muffin tin with cooking spray.

Heat a medium skillet over medium-high heat and cook sausage until brown and cooked through, about 10 minutes. Allow to cool – then chop up into small bite size pieces.

Sprinkle sausage, Cheddar cheese, and green onion evenly into prepared muffin cups.

Pour beaten eggs evenly over the sausage, cheese and onion mixture in each muffin cup. Season with salt and pepper.

Bake until egg cups are set in the middle, about 22 minutes. Cool for 5 minutes before serving.
