INGREDIENTS
4 slices of French bread
1 Tablespoons unsalted butter
2 large eggs
1/8 cup milk
1/2 cup pico de gallo (diced tomatoes, onions, cilantro)
Sea salt and cracked black pepper
1/4 cup mashed avocado
INSTRUCTIONS
Preheat oven to 400ºF.
Melt butter and brush it on both sides of each slice of French bread. Arrange on a baking sheet and bake for 5 minutes, then flip them and bake an additional 3-5 minutes until toasted. Remove the bread from the oven and set it aside.
In a medium bowl, whisk together the eggs, milk, and pepper.
Heat a nonstick skillet over medium-low heat. Add cooking spray to the pan and pour in the eggs. Stir as needed, until they are scrambled to your desired consistency.
Spread a portion of the mashed avocado on one side of each slice of toasted bread. Top the with scrambled egg and pico de gallo.
