1 lb. ground turkey
1/3 cup carrots, finely diced
1/3 cup onion, finely diced
1/3 cup celery, finely diced
2 tablespoons olive oil
Lettuce leaves (butter or romaine)
Green onions, finely sliced
Salt and pepper to taste
Sauce:
2 tablespoons Hoisin sauce
1-2 tablespoons Sriracha sauce
3 tablespoons coconut aminos or low-sodium soy sauce
1.5 tablespoons rice vinegar
3 tablespoons brown sugar (Swerve)
2 tablespoons sesame oil
In a medium skillet, heat olive oil and add carrots, onions, and celery. Sauté until softened and onion is translucent. Add ground turkey – season with salt and pepper and brown. Cook until no longer pink.
In a small bowl, combine sauce ingredients – add sauce to ground turkey and vegetables. Stir and simmer on low.
Serve over lettuce leaves.
Top with diced green onions and sesame seeds.
