Creamy Thai Dressing

INGREDIENTS

1/4 cup creamy peanut butter

1 tablespoon rice vinegar

2 tablespoons extra-virgin olive oil

2 tablespoons fresh squeezed lime juice 

1 tablespoon liquid aminos (soy sauce)

3 tablespoons honey

1 tablespoon minced garlic

1 tsp ginger paste 

Pinch of salt

1/4 teaspoon crushed red pepper flakes

2 tablespoons water or more as needed to thin 

INSTRUCTIONS

Combine all ingredients in a food processor until blended. Serve over leafy greens, shredded cabbage, matchstick carrots, diced green onions, wonton strips and toasted coconut.

Serve with or without protein of choice.
