Crockpot Southwest Chicken Soup

Beef Pot Roast

INGREDIENTS

2lb Boneless Chuck Beef Roast

1 can beef broth

1 packet onion soup mix

1 packet Au Jus Gravy mix

5 medium potatoes, diced

1 large onion, diced

3 large carrots, diced

1/4 cup butter, sliced into sections

**use low sodium broth to compensate for added salt in seasoning packets

INSTRUCTIONS

Brown all edges of the beef roast in a large skillet.

Place roast in a crock pot. Add potatoes, onions and carrots around top edges. Sprinkle both packets of seasoning over top. Place butter tabs over roast, pour broth over top.
Cook on high for 4-6 hours or low 6-8 hours.

Serve with warm dinner rolls and enjoy!
