Beef and Broccoli:
• 1 lb bite sized broccoli
• 2 tsp toasted sesame oil
• 3 tbsp cornstarch
• Sesame seeds for garnish – optional
For the Sauce:
• 1/3 cup soy sauce / liquid aminos
• 2/3 cup low-sodium beef broth
• 2 tbsp brown sugar (swerve)
• 3 Tbsp minced garlic
• 2 lbs chuck roast cut into thin strips
Using an Instant Pot:
Place oil, garlic, and Chuck roast inside inner pot and sauté until brown on all sides. Combine sauce ingredients and pour over top. Close the lid and set valve to pressurize. Select meat setting and adjust the time to 10-15 minutes. Release the valve and remove 1/3 of liquid from the pot. Add cornstarch to thicken liquid. Pour into the pot, add fresh cut broccoli – set to sauté for another 5-7 minutes until broccoli is soft.
Using a large pan: Place oil, garlic, and Chuck roast inside pan – sauté until brown on all sides. Combine sauce ingredients and pour over top. Bring to a boil then reduce heat and cover – simmer for 15-20 minutes or until meat is tender.
Add cornstarch to thicken liquid. Pour into the pan, add fresh cut broccoli – set to sauté for another 5-7 minutes or until broccoli is soft.
Serve alone or with rice. Enjoy!
