Crockpot Southwest Chicken Soup

INGREDIENTS
  • 2 pounds boneless, skinless chicken breast
  • 1 yellow onion, diced
  • 2 cloves minced garlic
  • 1½ teaspoons cumin
  • 1 teaspoon chili powder
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1/2 teaspoon paprika
  • 1/2 teaspoon dried oregano
  • 2 cans cannelloni beans
  • 1 cup sweet corn
  • 1 cans diced green chiles
  • 4 cups chicken broth

Toppings (optional)

  • Cilantro
  • Avocado
  • Tortilla chips
  • Shredded cheddar cheese
  • Sour cream
  • Black Olives
INSTRUCTIONS

In a medium skillet sauté onion and garlic until soft (OR) in your crockpot if it has a sauté feature.

In a large crockpot, place chicken breasts – pour beans and green chili’s and corn over top. Combine seasonings and sprinkle over top. Add broth over top. Cook on low 6-8 hours or high 4-6 hours.

Add toppings and enjoy!
