Homemade S’mores Granola

Cauliflower Nachos

INGREDIENTS
1 head of cauliflower
1 can (15.5 oz) garbanzo beans
2 tsp taco seasoning
2 Tbsp extra light virgin olive oil
1 cup shredded cheddar cheese
1 green onion, thinly sliced
1 Roma tomato, diced
2 Tbsp fresh cilantro, chopped
Black olives
Greek yogurt, plain (optional)
Salt and pepper to taste
INSTRUCTIONS

Preheat oven to 425 degrees. Lightly spray baking sheet. Slice cauliflower into small sections and place in a medium bowl with olive oil, taco seasoning and chickpeas – toss to coat. Arrange evenly across baking sheet and place in oven for 20 minutes. Sprinkle cheddar cheese over top along with green onions, tomato, cilantro, olives, salt & pepper to taste. Place back into oven for 7-10 minutes or until cheese is melted.
