Tuna Noodle Casserole

INGREDIENTS

1 1/2 cup egg noodles
1(6.4) packet tuna
cup carrots, sliced
1/2 yellow onion, diced
2 tsp minced garlic
1 tbsp all-purpose flour
2 Tbsp butter
1/2 cup low-sodium chicken broth
1/4 low-fat milk
1 cup frozen peas
1 cup freshly grated cheddar cheese
1 pinch sea salt and pepper, to taste
1 tbsp fresh parsley

INSTRUCTIONS
Heat butter in a medium skillet 
Sauté garlic and onions until soft and translucent 
Add sliced carrots and frozen peas 
Stir in chicken broth, milk, salt and pepper.
Add flour – stir and allow to simmer. 
Cook pasta as directed. 
Combine cooked pasta, vegetables, cheese and tuna. 
Cook in the oven covered, at 375 degrees for 15-20 minutes until cheese is melted and bubbly.
