INGREDIENTS
1 large sweet potato peeled and diced
1 cup chopped Broccolini – stems removed
1/4 cup ricotta, plus 1 extra Tbsp
4 large eggs
1/2 lemon – juiced
1/2 tbsp basil, julienned
1 Tbsp extra-virgin olive oil
Salt and pepper to taste
INSTRUCTIONS
Preheat oven 350 degrees.
Lightly spray two porcelain ramekins and place on a baking sheet
In a small frying pan, add olive oil, salt and pepper, sweet potatoes and chopped Broccolini. Cook on low until vegetables are soft enough to pierce with a fork. Divide vegetable mixture between two ramekins. In a medium bowl, whisk 4 eggs along with 1/4 cup ricotta cheese and fresh basil. Pour egg mixture over vegetables in two ramekins.
Place in the oven for 25-30 minutes. Meanwhile combine lemon juice with remaining ricotta cheese, salt and pepper.
Top egg bake with lemon ricotta and serve!
