- 2 cups all-purpose flour
- ½ teaspoon salt
- 1 teaspoon baking soda
- ½ teaspoon baking powder
- 1 teaspoon ground cloves
- 1 teaspoon ground cinnamon
- 1 teaspoon ground nutmeg
- 1½ sticks softened unsalted butter
- 2 cups sugar
- 2 large eggs
- 1 (15-oz) can pure pumpkin
Preheat the oven to 325°F and set an oven rack in the middle position. Spray two 8 x 4-inch loaf pans with non-stick cooking spray.
Combine flour, salt, baking soda, baking powder, cloves, cinnamon, and nutmeg in a medium bowl, set aside.
In a large bowl using an electric mixer, beat the butter and sugar on medium speed until smooth. Add the eggs one at a time. Continue beating until mixture becomes light and fluffy, 2-3 minutes. Add in the pumpkin. The mixture might appear grainy or clumpy.
Gradually add the flour mixture on low speed until combined.
Separate the batter evenly into prepared loaf pans and bake for 65 – 75 minutes, or until a fork comes out clean. Allow to cool for about 10 minutes.
