INGREDIENTS
For the salad:
1 bag salad greens
1 small tomato, diced
1/2 cucumber, peeled and diced
1/2 red onion, finely chopped
1/4 cup feta cheese
1/3 cup black olives, sliced
For the dressing:
1/2 cup olive oil
2 Tbsp red wine vinegar
2 Tbsp lemon juice
1 Tbsp minced garlic
1 tsp oregano
1 Tbsp feta
Salt and pepper to taste
INSTRUCTIONS
Place salad greens on a plate and arrange vegetables over top.
Combine vinaigrette ingredients in a food processor – season with salt and pepper to taste, and serve.
