Pad Thai Noodles

Light Penne Pasta

A scoop of penne pasta with homemade tomato sauce.
INGREDIENTS

2 tbsp olive oil
1 large onion, finely chopped
1/2 tsp minced garlic
2 lbs tomatoes, chopped
1 tsp salt
1/4 tsp pepper
1/4 cup thinly sliced basil
Grated Romano or Parmesan cheese
8 oz. low carb or whole wheat penne pasta
Additional basil (optional)

INSTRUCTIONS

Add olive oil, onion & minced garlic to a 6-qt pot over medium-low heat. Stir occasionally and let cook for about 5 minutes, or until translucent.
Stir in the tomatoes, slat and pepper; bring to a boil.
Reduce the heat; simmer uncovered until thickened, 25-30 minutes.

Meanwhile cook pasta according to package in a separate pot and drain.
Stir 1/4 cup basil into sauce.
Serve over pasta.
Top with cheese and additional basil or parsley if desired.
