Italian Spaghetti Squash Boats

INGREDIENTS
Olive oil cooking spray
1 tsp light or fat-free Italian dressing
Spaghetti sauce (with or without meat)
Fresh parsley to garnish
Freshly grated Parmesan cheese
INSTRUCTIONS
Preheat the oven to 400 degrees. Coat a baking sheet lightly with cooking spray.
Poke holes in skin of the squash, and microwave 2-3 minutes to help soften skin before slicing. 
Slice squash in half lengthwise – scoop and remove the seeds. Pour 1/2 tsp Italian dressing into each side of squash – using a basting brush, coat inside of the squash with dressing. Place cut side down on baking sheet and in the oven for 30 minutes.
Meanwhile prepare spaghetti sauce.
Remove squash from the oven and let cool. Use a fork to loosen strands of the squash.
Place a scoop of spaghetti sauce into the center of the cooked squash.
Sprinkle with cheese and parsley and serve!
