1 lb. lean ground turkey or beef
1 tablespoon olive oil
1 can mild chili beans
2 cans petite diced tomatoes, do not drain
1 green pepper, finely diced
1 yellow onion, finely diced
2 tablespoons minced garlic
2 cups low-sodium tomato juice
½ teaspoon Cajun seasoning
1-2 tablespoons pure maple syrup
1 packet of low-sodium McCormick chili seasoning (OR) mix your own of the following:
4 teaspoons chili powder
1 teaspoon cayenne
1/2 tablespoon onion powder
1/2 tablespoon garlic powder
1 teaspoons cumin
1/4 teaspoon black pepper
Optional Toppings: Plain Greek yogurt, shredded cheddar cheese, parsley
Heat a large skillet with olive oil. Add onion, garlic, green pepper, and onion. Cook until soft and onion is translucent. Add ground turkey or beef to skillet and cook until brown.
Drain excess grease.
In a large stock or crock pot, place meat mixture. Add remaining ingredients.
Stovetop: Bring to a boil and allow to simmer
Slow cooker: Cook on high 4 hours or low 6-8 hours.
