INGREDIENTS
3 Tbsp extra-virgin olive oil
1/2 large yellow onion diced
2 Tsp minced garlic
1/4 tsp sea salt
1 lb. ground pork
2 Tbsp brown sugar (Swerve)
2 Tbsp liquid aminos (soy sauce)
1 pkg rice- Ready Cook rice
2 large eggs scrambled
1 carrot – grated
INSTRUCTIONS
In a large skillet, heat oil with onions, salt and garlic. Sauté over medium heat until soft and translucent.
Next, add pork and cook for 3 minutes until crumbled. Stir in brown sugar @swervesweetie and liquid aminos. Cook until liquid evaporates and pork begins to caramelize.
Add scrambled egg, grated carrot and green onion. Serve over rice.
