Buffalo Chicken Cashew Salad

Buffalo Chicken Salad on a plate with dressing.
INGREDIENTS

1 bag (8 oz.) mixed salad greens
1 cup boneless chicken breast, cooked and cubed
¼ cup buffalo sauce (Franks or RedHot)
¼ cup celery, finely diced
¼ cup shredded carrots
¼ cup red onion, thinly sliced
Green onion to garnish
Crumbled Feta or Blue Cheese
1/3 cup cashews
Fat-free Ranch or Blue Cheese dressing

INSTRUCTIONS

Toss chicken in buffalo sauce and placed over mixed greens. Add celery, onion, carrots, crumbled Feta or Blue cheese and cashews. Drizzle with Ranch or Blue Cheese dressing. Garnish with green onion slices.
