INGREDIENTS
For the salad:
2 packed cups baby spinach
1 large orange, sliced
½ cup (3 oz) blueberries
¼ cup pecans
¼ cup crumbled feta cheese
For the vinaigrette:
¼ cup extra virgin olive oil
1 tbsp balsamic vinegar
1 tbsp fresh orange juice
1 tbsp honey
INSTRUCTIONS
In a mason jar or food processor combine vinaigrette ingredients – mix well.
Assemble salad and drizzle vinaigrette over top and enjoy!
