S’mores Smoothie

Black Bean and Corn Salsa

INGREDIENTS
 1 (15 oz) can white shoepeg corn
1 (15 oz) can black beans, drained and rinsed
1 (14.5 oz) can Italian style petite diced tomatoes, drained
1 bunch finely chopped cilantro
1/2 cup chopped red onion
1 yellow, green and/or red bell pepper, seeded and chopped
¼ cup fresh lime juice
1 teaspoon  olive oil or to taste
Salt and pepper to taste
Hot sauce, to taste
INSTRUCTIONS

In a medium bowl combine corn, black beans, tomatoes, cilantro, red onion and bell pepper.
Stir in lime juice and drizzle with olive oil to serve.

Serve with Lime flavored (or plain) tortilla Chips.
