INGREDIENTS
Ingredients:
10oz uncooked shrimp
3 large carb balance tortillas
2 cups shredded cheese
1 poblano pepper, thinly sliced
1 small red onion, thinly sliced
1 Tbsp fajita or taco seasoning
4 Tbsp guacamole
1 lime – quartered
Cilantro – chopped
1 tsp no-sugar BBQ sauce
2 tsp olive oil
Salt and pepper to taste
INSTRUCTIONS
Instructions:
In a large skillet heat 1 tsp olive oil over medium heat. Add poblano pepper and onion – cook until soft & fragrant – add fajita seasoning.
Wash and pat dry shrimp – place in pan next to vegetables with 1 tsp olive oil. Cook 3-4 minutes until shrimp is opaque.
Remove from pan and set aside.
Lightly spray a flat skillet with cooking spray, place one large tortilla on skillet. Sprinkle cheese over top – add cooked peppers, onions, and shrimp. Drizzle BBQ sauce over top.
Fold tortilla in half – cook until light golden brown – slice into triangles and serve with lime squeezed into guacamole and cilantro.
