Instant Pot Taco Pasta Bake

Homemade Mac & Cheese

INGREDIENTS
  • 1 package (16 oz) uncooked pasta 
  • 1/4 cup unsalted butter
  • 1/4 cup all-purpose flour
  • 2 cups whole or 2% milk, warmed
  • 2 cups (16 oz) grated cheddar cheese
  • 1 tsp kosher salt
  • 1 tsp black pepper
  • Extra cheese for the top
INSTRUCTIONS

1. Cook pasta in boiling water until al dente. Drain & rinse pasta – set aside.

2. In medium-sized pot, whisk together butter and flour – stir over medium heat to thicken and form a roux.

3. Slowly pour in warm milk, whisk constantly to avoid lumps.

4. Reduce heat to low then begin stirring in the grated cheddar cheese – season with salt and pepper.

5. Pour cheese mixture over paste – stir to combine. Top with shredded cheddar cheese and enjoy!
