1 lb lean ground beef
1 (24 oz) jar pasta sauce of choice
1 (16 oz) container low-fat cottage cheese
3 cups bow tie pasta cooked according to package
1 Tbsp Italian dressing, divided
1 Tbsp fresh Basil, julienned and some for garnish
2 cups mozzarella cheese, divided
Fresh parsley, for garnish
In a medium skillet, brown ground beef until crumbled. Drain and replace back into skillet. Stir in pasta sauce, simmer on low.
In a medium-sized casserole dish, lightly spray with cooking oil. Begin layering casserole dish with cooked noodles on the bottom. Drizzle 1/2 Tbsp Italian dressing over noodles. Spread 3/4 cup meat sauce over noodles. Spread 3/4 cup cottage cheese over sauce. Sprinkle 1/2 cup mozzarella cheese over cottage cheese. Repeat layers if room allows and finish by topping with shredded mozzarella cheese. Cover and bake at 350 degrees for 25 minutes. Remove cover and bake an additional 5 minutes until cheese is melted and bubbling. Garnish with fresh parsley and basil.
