White Chicken Chili

Pad Thai Noodles

A bowl of pad thai noodles with sauteed veggies and egg.
INGREDIENTS

For Noodles:
10 oz. rice noodles
2 tbsp olive oil, divided
Protein of choice
1/2 cup shredded carrots
2 cloves garlic, minced
2 eggs, whisked
2 green onions, sliced
Cilantro, chopped
Toppings: chopped peanuts, lime wedges

For Sauce:
1/3 cup packed brown sugar (I used Swerve)
1 tbsp Sriracha sauce
2 tbsp liquid aminos
Fresh lime juice
1/4 cup tamarind concentrate (optional)

INSTRUCTIONS

For Noodles:
Cook noodles as directed.

For Sauce
Whisk all ingredients together in a medium bowl until combined. Set aside.

In a large pan, add olive oil, garlic, veggies – saute until soft 3-5 minutes. Push vegetables aside and add protein of choice, until cooked. thoroughly.
Push vegetables, protein aside and add egg, scramble.
Mix together all ingredients in the pan and add sauce and cooked noodles – toss to combine.
Add toppings as desired.
