4 carb-balance tortillas
1 small yellow onion, finely diced
1 roma tomato, chopped
2 tsp. cumin
1 tsp garlic powder
1 tsp. chili powder
1 tsp. paprika
1 lb. lean ground beef
1 can red enchilada sauce
1 cup shredded cheddar cheese
Green onion, chopped (garnish)
Preheat the oven to 400°.
Lightly spray bottom and sides of a baking dish.
Brown ground beef in a medium skillet; add onion, tomato, 1/2 can enchilada sauce and seasonings. Stir to combine.
Spoon 1/3 cup of the mixture over each tortilla and roll up. Arrange the rolled tortillas in the prepared baking dish.
Cover and bake at 400° for 10 minutes. Remove cover and bake for an additional 5 minutes.
Top with green onion and diced tomatoes.
