For Salad:
1 bag (8 oz.) mixed salad greens
1/3 cup fresh blueberries
¼ cup red onion, thinly sliced (can’t seem to remove the space after this line ?)
¼ cup honey roasted pecans or walnuts
¼ cup crumbled feta cheese
For Vinaigrette:
1 cup fresh blueberries
½ cup maple syrup
½ cup red wine vinegar
1 cup extra virgin olive oil and avocado oil mixed
Sea Salt – to taste
Black pepper – to taste
For Salad:
Toss together mixed salad greens with 3 Tbsp vinaigrette in a bowl
Transfer to a plate and top with blueberries, onion, pecans and crumbled feta or goat cheese.
For Vinaigrette:
Add blueberries, maple syrup and red wine vinegar to a blender and pulse until well incorporated. Slowly add oils to the vinaigrette. Add salt and pepper to taste and protein of choice.
