Skinny Banana Muffins

Freshly baked banana muffins.
INGREDIENTS

2 ripe bananas
1 cup unsweetened applesauce
1 large egg
1 Tablespoon vanilla extract
3 Tablespoons brown sugar (Swerve)
2 Tablespoons coconut sugar
1 teaspoon ground cinnamon
1 teaspoon baking powder
1 teaspoon baking soda
1/2 teaspoon salt
1 1/2 cups all-purpose flour
2 Tablespoons unsalted butter – melted

INSTRUCTIONS

Grease a large muffin pan.
Preheat oven to 350 degrees.
Mash bananas in a mixing bowl.
Add applesauce, egg,vanilla, brown sugar, coconut sugar, and cinnamon – stir well to combine.
In a separate small bowl stir together flour, baking powder, baking soda, and salt. Add to banana mixture and stir just to combine – don’t over mix.
Scoop in muffin pan and bake 18-20 minutes. Makes 6 large or 12 small muffins. 

Serves : 6 large or 12 regular sized muffins
