2 tablespoons olive oil
Pink Himalayan salt to taste
Fresh ground pepper to taste
4 cups cooked and cubed sweet potatoes
2 tablespoons chili powder
2 teaspoons ground cumin
1 tablespoon lime zest
1 squeeze of lime juice
2 sweet bell peppers, sliced
1 small red onion, sliced
1 tablespoon chopped fresh cilantro
2 eggs – cooked to preference
Heat 1 tablespoon of olive oil in a large skillet over medium heat. Add sweet potato, onions, peppers, chili powder, cumin, salt, pepper, and cilantro.
Cover and simmer for 8-10 minutes – stir frequently.
Serve with eggs cooked to preference.
Top with squeeze of lime juice and zest.
