- 2 bacon wrapped pork filets from @kwiktrip
- 1 tablespoon olive oil
- 1/2 teaspoon cajun seasoning
- 2 cups cooked penne pasta
- 2 tablespoons salted butter
- 2 teaspoons minced garlic
- 1 /2 tablespoon flour
- 1/2 cup low-fat milk
- 1/4 cup freshly grated Parmesan
- salt and freshly ground black pepper to taste
- 1 Roma tomato diced
- chopped fresh parsley leaves if desired
Heat your oven to broil.
Heat 1 tablespoon olive oil in a large skillet over medium high heat. Add pork filets and cook about 10 mins – rotating sides until cooked through. Place pork on a broiling pan – and in the oven for an additional 5 minutes until bacon is cooked to preference. Remove to a plate and cover with foil to keep warm.
Meanwhile, In a large pot of boiling water, cook penne pasta according to package; reserve 1 cup of water and drain well – set aside.
Melt butter in a separate pot over medium heat. Add garlic, and cook, stirring frequently, until fragrant.
Sprinkle flour and stir well to create a thicker paste. Gradually whisk in milk. Cook, whisking constantly, until incorporated, about 1-2 minutes.
Stir in Parmesan until slightly thickened. If the mixture is too thick, add pasta water as needed; season with Cajun seasoning, salt and pepper, to taste.
Stir in pasta and gently toss to combine.
Serve immediately with pork, garnished with tomatoes, shredded Parmesan and parsley.
