INGREDIENTS
3 cups cooked jasmine rice
1 tsp extra-virgin olive oil
1 small onion, diced
1 cup frozen peas and carrots
2 large eggs, scrambled
2 boneless skinless chicken breasts – cooked and diced
t Tbsp liquid aminos (soy sauce)
Salt and pepper to taste
INSTRUCTIONS
In a medium skillet heat olive oil, cook vegetables until soft. Add cooked chicken, scrambled egg, jasmine rice and liquid aminos.
Salt and pepper to taste.
