Simple Slow Cooked Pot Roast

Stuffed Jack-O-Lantern Peppers

INGREDIENTS

1/2 lb mild Italian Sausage, Lean Ground beef or Turkey
3 orange Bell peppers
1 Tsp Minced Garlic
1 tsp Garlic powder
1/4 cup minced onion
1/2 tsp Oregano
3/4 cup low-sugar spaghetti sauce – I used Cocina Antica found @festfoods
1/4 tsp Black pepper
1/2 tsp Paprika
2 tsp Olive oil – divided
1/4 tsp Cumin
Salt and pepper to taste
Shredded Cheese – Romano, Parmesan, Asiago and Mozzarella

INSTRUCTIONS

Preheat oven to 350°. Cut and remove the top of each pepper, discarding the cores and seeds. With a small pairing knife, carefully carve a Jack O’Lantern face into each pepper. Drizzle the inside of each pepper with 1 tsp olive oil and season generously with salt and pepper. Place upright in a baking dish along with the pepper tops.

Heat 1 tsp of oil in a large nonstick skillet. Cook onions until soft, about 5 minutes. Add garlic until soft and translucent about 1 minute more. Add meat of choice and cook until no longer pink. Drain excess fat if necessary.

Return skillet to stove over medium heat. Add seasonings and sauce. Simmer 5-7 minutes.

Divide mixture and fill each pepper 3/4 of way leaving room at the top for cheese. Sprinkle cheese combination over top each pepper and place baking dish into the oven until peppers are tender and cheese is melted.
