INGREDIENTS
6 Yukon gold potatoes medium – peeled and diced
1/4 cup Greek yogurt, plain
1/4 cup skim milk
1/4 cup chicken broth
1/2 teaspoon sea salt
1/2 teaspoon dried parsley
1/2 teaspoon black pepper
1/8 teaspoon garlic powder
INSTRUCTIONS
Place potatoes in a large pot, cover with water and cook on medium/high heat until boiling. Allow potatoes to cook until tender.
Once potatoes are cooked, turn off the burner, drain, and return to pot.
Add Greek yogurt, milk, and chicken broth.
Use a hand mixer to mash potatoes and add more broth (or more milk) as needed.
Add seasoning to taste and mix until well combined.
