1 lb lean ground beef
1 tsp olive oil
1/2 small yellow diced onion
2 tsp chili powder
2 tsp cumin
1 Tbsp minced garlic
2 cups **cooked, peeled & cubed sweet potatoes
1 can diced tomatoes (drained)
1 can seasoned black or chili beans
1/3 cup shredded Monterey Jack cheese
2 Tbsp Tabasco Green Pepper Sauce
Cilantro for garnish
Salt and pepper to taste
In a large skillet heat olive oil. Add onion, garlic and ground beef – brown until crumbled. Add chili powder, cumin, salt and pepper.
Drain ground beef – remove grease from skillet.
Add sweet potato, tomatoes, beans and Tabasco – stir and simmer while covered 5-7 minutes.
Serve in a bowl topped with cilantro and shredded cheese.
